The Ingredients
The Bagel Stack

1 fresh everything or plain bagel, halved and toasted

2–3 oz cold-smoked salmon (lox)

4–5 slices homemade pickled red onion (see below)

2 tbsp chive & onion cream cheese (see below)

Optional: capers, thinly sliced cucumber, arugula or microgreens, cracked black pepper
Pickled Red Onions

1 medium red onion, thinly sliced

½ cup apple cider vinegar
-
½ cup water
-
1 tbsp sugar
-
1½ tsp kosher salt
-
Optional: 3–4 whole peppercorns, 1 garlic clove, or a pinch of chili flakes for extra bite
Chive & Onion Cream Cheese

4 oz plain cream cheese, softened

1 tbsp finely chopped fresh chives

1 tbsp finely minced shallot or green onion

Salt and pepper to taste

Optional: small squeeze of lemon juice for brightness

Soften cream cheese: Let cream cheese sit at room temperature for 10–15 minutes for easy mixing.

Mix in aromatics: Stir in finely chopped chives and minced shallot (or green onion).

Season: Add salt, pepper, and a small squeeze of lemon juice (optional) for brightness. Mix until smooth and well combined.

Spread: Generously spread onto a toasted everything bagel as the flavorful base for your lox and toppings.
Chive & Onion Cream Cheese
Layer the Lox

Layer the lox: Once your everything bagel is slathered with chive & onion cream cheese, gently layer on 2–3 ounces of cold-smoked salmon. Let the folds drape naturally—this gives the bagel a more satisfying texture and an elevated, deli-style look. Aim for even coverage so each bite gets a bit of that buttery, briny flavor.


Assembly

Add toppings: Top with pickled onions, then add optional extras like capers, cucumber slices, arugula, or microgreens - we chose pickled onions, chives and capers.
