  1. Combine: In a small bowl, combine the sour cream and mayonnaise.

  2. Mix in cheese: Stir in the shredded Parmesan cheese until evenly mixed.

  3. Taste: Adjust if needed — add a little more Parmesan for extra cheesiness, salt and pepper to taste.

  4. Cover and refrigerate: Until ready to use to let the flavors meld (optional, but recommended for at least 10–15 minutes).

Heirloom Tomato Prep

  1. Clean: Rinse and dry the heirloom tomatoes thoroughly to remove any dirt or debris.

  2. Slice: Using a sharp knife, slice the tomatoes into medium-thick rounds—about ¼ inch thick—to maintain structure and juiciness.

  3. Season: Lightly season the slices with salt and freshly cracked black pepper. This helps draw out the flavor and balances the richness of the sandwich.

  4. Rest: Let rest for 5–10 minutes at room temperature while preparing the other components. This gives the tomatoes time to release a bit of their juice and settle into their flavor.

Assembly

  1. Toast the bread: Lightly toast two slices of steel-milled wheat bread until golden and crisp. This adds structure and contrast to the layered fillings.

  2. Spread the Parm: While the toast is still warm, generously spread the Parmesan mixture on one or both slices—depending on how saucy you like it.

  3. Layer the lettuce: Place a few crisp leaves of romaine directly on the bottom slice. This creates a fresh base and prevents the bread from getting soggy.

  4. Add the bacon: Lay down 2–3 slices of cooked, crispy pork bacon (or your preferred alternative). Make sure they’re evenly distributed for bite-to-bite flavor.

  5. Top with tomatoes: Add 2–3 slices of your prepped heirloom tomatoes. Feel free to alternate red and yellow for color and taste variation.

  6. Season and stack: If desired, add a final light sprinkle of salt and black pepper before placing the top slice of toast over everything.
